Snake River Farms’ American Kobe Beef is produced from the progeny of the top marbling Japanese Wagyu bull in the US, born in the Kobe region of Japan. SRF crosses its Wagyu cattle with premium American Black Angus to produce American Kobe Beef. Combined with this superior genetics, SRF utilizes their proven all-natural, slow-paced Japanese feeding program free of growth promoting hormones or animal-by products in their feed, which creates SRF’s trademark buttery flavour.

Why SRF American Kobe Beef?
Snake River Farms is a subsidiary of Agri Beef Co., a family owned cattle production and cattle feeding company based in Boise, Idaho. Agri Beef Co. is the world’s 1st ISO/HACCP certified cattle company, ranking in the top 10 in the U.S. for number of fed cattle; supplying nearly 500,000 cattle to major packers and is the world’s largest supplier of Certified Angus Beef (CAB) qualifying carcasses.
SRF is the largest producer and exporter of American Kobe Beef (Wagyu cattle) in the U.S.A. with their products being well received in over 10 foreign countries including Canada. Grading and BMS Explained

In Japan, cut beef quality is usually referenced to the marbling content which is graded on a Beef Marbling Standard of No. 1 – 12, with No. 1 having practically no marbling to No. 12 being completely white with marbling. For rough comparison Canada A would be BMS No. 1, Canada AA would be BMS No.2, Canada AAA would be BMS No.3 and Canada Prime would be BMS No.4.
Unlike other Kobe Beef producers SRF’s economies of scale and ever expanding market development allow SRF to sell three grades of product that are each above USDA Prime and each within a narrow range so that customers consistently receive exactly what they expect. The three grades as determined at the 12th and 13th rib are classified as Silver (Retail or BMS 4 - 5), Black (Foodservice or BMS 6 -7) and Gold (Export or BMS 8 - 10).
Studies have indicated that Angus beef averages BMS of 2 but cannot achieve BMS greater than 5. On the other hand, Wagyu cattle averages BMS 4 – 6 but depending on quality of genetics, controlled feeding program and age at time of slaughter, can on very rare occasions reach the top grade of BMS 12. In Japan, for beef cuts to be considered of ‘Kobe’ quality, they must exhibit BMS of 6 or higher. Therefore, Nikuya Meats mainly imports Black and Gold grade SRF American Kobe Beef.
We have evaluated many “Wagyu” and so called “Kobe Beef” products from Canada and U.S.A. and have had first hand experience with many difficulties in supply, consistent quality in terms of marbling, colour, fragrance, flavour, cut specifications, packing specifications and service.
